The menu is specially curated by Head Chef Federico Pitasi, who has an extraordinary ability to craft unique flavors derived from his Italian heritage and subsequent sourcing of ingredients from the regions where he was raised. Namely, Chef Federico has painstakingly sourced many Italian ingredients with Italy’s prestigious D.O.P. certification.

For Floriade About Town, our Chef has crafted an array of exquisite dishes:

  • Zucchini Flower: Delicate zucchini flowers stuffed with ricotta, roasted pumpkin, and pine nuts, accompanied by crisp radicchio leaves and a capsicum pesto.
  • House-Made Squid Ink Tonnarelli: Fresh squid ink tonnarelli pasta adorned with zucchini julienne, served with a butter and lemon sauce, and topped with a blue swimmer crab and nduja pangrattato.
  • Torta della Nonna: A shortcrust pastry filled with smooth ricotta, pine nuts and citrus notes, paired with a raspberry coulis and refreshing lemon sorbet.
